You could bake a whole pumpkin pie … or you could make these equally as delicious pumpkin tarts in half the time. For added crunch and protein, put a whole pecan on top of each tart (with a chocolate chip, of course!).
Ingredients
- 3 cups of milk
- ¼ cup canned pumpkin
- 4 tablespoon white sugar
- 2 tablespoon brown sugar
- 2 eggs
- 1 teaspoon ground anise
- 1 teaspoon ground cinnamon
- 2 tablespoon cornstarch
Instructions
- Combine milk, pumpkin, sugar, brown sugar on medium to low heat
- Whisk
- Simmer
- Add eggs, anise, cinnamon and cornstarch
- Whisk
- Cook until eggs are fully cooked and mixture thickens
- Allow to chill for 15 minutes
- Add mixture to tart shells (chocolate chips optional)
- Serve
