You could bake a whole pumpkin pie … or you could make these equally as delicious pumpkin tarts in half the time. For added crunch and protein, put a whole pecan on top of each tart (with a chocolate chip, of course!).
 

Ingredients

  • 3 cups of milk
  • ¼ cup canned pumpkin
  • 4 tablespoon white sugar
  • 2 tablespoon brown sugar
  • 2 eggs
  • 1 teaspoon ground anise
  • 1 teaspoon ground cinnamon
  • 2 tablespoon cornstarch

Instructions

  1. Combine milk, pumpkin, sugar, brown sugar on medium to low heat
  2. Whisk
  3. Simmer
  4. Add eggs, anise, cinnamon and cornstarch
  5. Whisk
  6. Cook until eggs are fully cooked and mixture thickens
  7. Allow to chill for 15 minutes
  8. Add mixture to tart shells (chocolate chips optional)
  9. Serve
