Rainbow carrots are great for kids who do not like different foods mixed together because they provide a variety of vitamins, minerals, phytochemicals and antioxidants, all in the same food!
 

Ingredients

  • 6 cups kale, torn into bite-sized pieces
  • 3 cups rainbow carrots, grated
  • 1 cup apple, shredded
  • 1/2 cup golden raisins
  • 1/4 cup walnuts, chopped and roasted
  • 2 tablespoons Italian parsley, minced
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons walnut oil
  • 2 tablespoons apple cider vinegar
  • 1/2 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon granulated garlic (optional)

Instructions

  1. Combine kale, carrots, apples, raisins, walnuts and parsley in a large bowl.
  2. In a small bowl, whisk together vinegars, walnut oil, mustard, salt, pepper and garlic.
  3. Pour dressing over salad, and toss to coat.
